What started as an extension of friendship from Gloria Jackson & Mark Leveillee to Linda & John White of Parsons Street, has turned into an exciting collaboration and model that may enhance both businesses. As of Father’s Day, June 21st, Parsons Street will be moving their dining operations to pristine international Lake Wallace, Canaan, VT. for the summer and fall; and returning to their Colebrook NH. location in late fall.
Gloria and Mark reached out to Linda & John about a month ago and offered their kitchen & dining area at Lake Wallace to help Parsons get started during limited restaurant parameters. The ideas and discussions evolved and they began to see opportunities that might meet challenges and gaps for both operations. “Even with restrictions starting to loosen, we saw that the size of our Colebrook operation might not provide ease of mind and comfortable distancing for our guests in the next few months. Jackson’s Lodge provides both outdoor dining and spacious indoor dining opportunities, and who can beat the amazing setting looking out over the lake,” said the Whites.
“We love to see lots of activity and life here in the Lodge”, said Gloria. Now in its 34th year of operation under Gloria Jackson’s stewardship, there has been a long standing tradition of serving a country-style breakfast on weekends to their guests and local community. Their signature homemade breads and famous strawberry rhubarb jam have always been a staple. “It’s been more and more difficult to find a chef to work for the summer season, and we’re excited about pooling our resources”.
The model will look a little different for both. ‘Parsons Street at Jacksons’ will continue an “upscale dining experience” with a comfortable, casual ambiance. The Chefs are finalizing their summer dinner menu which will be offered Wednesday, Thursday, Friday and Saturdays. Walk-ins will be welcome; however, reservations are encouraged and will be available from 5:00 – 8:30pm. New this season: ‘Parsons Street at Jacksons’ will offer Sunday Brunch from 8:30am- 1pm every Sunday, beginning with Father’s Day, June 21st, and Jackson’s Lodge will continue its tradition of giving special tomato plants for every dad! Renowned baker Barbara Nedd will also be joining the team at Jackson’s to provide her signature donuts, sweet rolls, and desserts. A full Sunday Brunch will be offered every Sunday to both Jackson’s Lodge guests and the public.
Sometimes the best ideas are born during difficult times. “We feel particularly blessed to be living in such a beautiful place and community where people really care about each other and are willing to work together – we look forward to a fun, creative, season!”
